Hikari Bullet Train Sushi & Bar is a Japanese restaurant in Japantown. Bullet train sushi is a way of eating that includes ordering off a digital device, like an iPad, which sends orders to the kitchen. After the food gets made, it gets sent out on trains that arrive at the side of your table. This restaurant is one of the few places in the city that offers these bullet trains.


I recommend trying the Deep Fried Gyoza, Niku Udon, Spicy Tuna Maki, Negi Hamachi Maki, and 49ers Roll.


The Deep Fried Gyoza is deep-fried pork gyoza. The outside is crisp, and this accentuates the juicy, flavorful filling that has hints of ginger.


The Niku Udon is beef udon topped with fish cake, seaweed, and green onion. The noodles are chewy and pillowy, the broth is seasoned perfectly, and the toppings complement the dish.


The Spicy Tuna Maki is spicy tuna and cucumber wrapped in sushi rice and a layer of seaweed. Each piece has a significant kick of spice that balances with the refreshing cucumber, sushi rice, and seaweed.


The Negi Hamachi Maki is hamachi, also known as yellowtail, and green onion wrapped in sushi rice and seaweed. The hamachi is buttery in texture, and the green onion adds a layer of texture. This roll is simple but, it is just as delicious as the other rolls.


The 49ers Roll is salmon and avocado wrapped in seaweed and rice. The roll gets topped with salmon, lime, lemon, tobiko, flying fish roe; and masago, capelin fish roe. The salmon, rice, nori, tobiko, masago, and avocado make the roll rich. But it gets refreshed with the citrus from the lime and lemon.
