Eggnog Pancakes


Eggnog Pancakes w/ Jarred Peaches & Whipped Cream


Eggnog is one of the many things that symbolize the holidays and is one of my favorite drinks. People give it a bad reputation due to the raw eggs in it. It is also commonly stated that eggnog tastes like"toothpaste". However, the concept of it is truly phenomenal. Eggnog is a drinkable custard. It has the same ingredients as traditional ice cream. I like to think of it as a more melted milkshake.


These pancakes are one of the many ways to praise eggnog. They are very fluffy and have a hint of the signature flavor.


I like to make my pancakes small in size, so keep in mind that this recipe makes pancakes about 2-3 inches in diameter.



Recipe


Makes about 20 pancakes


Ingredients

  • 2 cups all-purpose flour

  • 4 tsp baking powder

  • 1/2 tsp salt

  • 1/2 tsp ground nutmeg

  • 2 cups eggnog

  • 2 eggs

  • 3 tbsp butter, melted



Directions


1. In a medium bowl, mix the flour, baking powder, ground nutmeg, and salt.


2. Pour in the eggnog, butter, and egg.


3. Mix until all the ingredients have gotten combined thoroughly.


4. Heat a frying pan over medium-low heat.


5. Grease it with butter or cooking spray.


6. Pour a spoonful of batter onto the frying pan and repeat until the pan is full. Make sure to leave enough space to flip them. I can usually fit three pancakes in the frying pan.


7. Cook pancakes for 2 minutes. The top should have bubbles forming and popping.


8. Flip the pancakes with a spatula and cook them for 1 minute. The side facing the pan should be golden brown.


9. Plate the pancakes with fruit, maple syrup, and whipped cream & enjoy.


The Eggnog Pancakes will keep for up to five days in the refrigerator.



Notes


  • I used a metal spoon that is considered a teaspoon.
